It can be tempting to cut corners when it comes to your cleaning routine, to save both time and money by using all purpose sprays and chemicals to clean a variety of surfaces and parts of your bar, cellar or front of house.
But, in reality, ensuring you have the right products for the right job can save you time and money in the long run – as well as ensuring that every element of your hospitality venue is spotlessly and hygienically clean.
Hance McGhie from Chemisphere UK – a leading manufacturer of cleaning products for the hospitality industry – tells us about the science behind the products that will leave every aspect of your venue sparkling…
Cleaning surfaces…
Surfaces need cleaning regularly throughout the day to ensure that they look great and are hygienically clean. A good surface spray should be food grade but food safe, and the ingredients should eat into biofilm removing any areas of residue that harbour pathogens.
Venues often feature lots of different surface materials, such as wood, tile, plastic and stainless steel, so ensuring that your surface spray works across all surfaces without damaging them is imperative. We have developed our independently-tested surface sanitiser to be extremely effective against bacteria, yeast and 99.999% of microbes, and – to ensure it’s easy to use – there is no need to rinse and it continues working for up to 14 hours when dry.
Cleaning nozzles, connectors and sparklers
To ensure your bar is spotlessly clean, all nozzles, sparklers and connectors should be soaked overnight using sanitising tablets – NOT sparkling water or standard bleach or detergent. Good sanitising tablets should be extremely effective against bacteria, mould, spores and fungi and will ensure your equipment is ready to go the next morning.
Using a tap and keg sanitising spray is also a good idea, as this can be used as and when required. A spray can target bacteria and fungi, and remove any build up of yeast. A good tool for your armoury…
Cleaning beer lines
Beer lines always require specific cleaning products to ensure they are spotless – your beer quality and customer satisfaction depends on it! Brewers pour so much passion into their craft ales and beers, it’s imperative that it is served well to retain the quality.
Beer lines need to be cleaned by alkaline solutions which contain Potassium Hydroxide – a chemical used in the food industry because it’s an excellent detergent with strong antimicrobial properties. Your beer line cleaning products should be effective at emulsification and saponification of fats, protein peptization, and efficient at removing soils, greases and oils. Beer lines can get clogged up with yeast, so it’s crucial that your line cleaners stand up to the test – time and time again.
Our Purple Pipeline Original is well known within the industry and is one of our top selling products, as it changes colour if your lines are dirty and doesn’t contain any caustic soda. Meanwhile, our Pipeline Gold is a concentrated, advanced chlorine-free beverage-dispense system cleaner, which features a sophisticated blend of innovative surfactants and sequestrants that combine to penetrate, emulsify, and lift soil and biofilm to leave lines astonishingly clean.
Cleaning glassware
Glassware comes into direct contact with customers – so it goes without saying that it needs to be absolutely spotless, as well as hygienically clean.
The best detergents for glassware include potassium hydrochloride but no caustic soda. Alkaline cleaning agents such as potassium hydrochloride are incredibly effective at emulsification and saponification of fats, protein peptization, and are efficient at removing soils, greases and oils. This means that every trace of lipstick or other residues will be magically removed from your glassware so you have confidence that your customers will always be presented with spotless glasses.
Cleaning cutlery and crockery
If your venue serves food or snacks, crockery and cutlery should always be put through a hot commercial grade dishwasher to ensure it’s hygienically clean and ready to be used again straight away. Using a highly concentrated bactericidal dishwashing and sterilising powder should totally eliminate egg, protein, starch deposits and tannin stains, meaning that your customers can be confident of spotless crockery that doesn’t contain any leftover meat or dairy product residue that’s left over from previous customers.
